Grey Ghost in Midtown, in short time, has carved out a nice space in Detroit's restaurant scene, serving up everything from oysters to bison tartare to salmon chorizo to filet mignon.
But one of the simpler menu items that has resonated with customers is fried bologna. Yes, good old bologna.
"Fried bologna. That will be with us for ever," chef and co-owner John Vermiglio tells Eater Detroit's Brenna Houck.
"We'll be making bologna on a waffle forever. That's what you shoot for though right? I paid all that money for my education and all this experience and we're going down — think about it though: there are some chefs with some legendary dishes out there that our tremendous and then we're going down in history for bologna."
